Nothing like a yummy scramble to start the morning!
This mix had mushrooms, parmesan, and fresh basil.
I always try to use fresh herbs when available – it makes such a difference in cooking! I actually got into a discussion with coworkers about this the other day! I was complaining about how Fred Meyer was actually out of basil and I needed to make a second trip to a grocery store because I can’t live without my fresh herbs!
For whatever reason, we got on the topic of storing herbs. And they looked at me like I was a crazy person when I described how I do it!

For my cilantro, I store it in a jar with water. Sometimes I’ll put a bag over the top of it but more often than not, it sits on the counter just like that.
For my basil, I keep it on top of the fridge, not in the fridge! It’s not good for basil to be kept refrigerated! The cold can damage it!
Those are my two primary herbs that I keep on hand. Occasionally, I will purchase fresh rosemary or thyme and I store those in the crisper section of my refrigerator.
Fresh herbs are a great addition to basically any meal. Especially eggs. But everything is good with eggs.

I am relaying that cilantro info to my roommie. She is obsessed with the stuff but never buys it because it goes bad so quickly. Also, never knew that about basil either!
