If you know me well, you know I am obsessed with mangos. So when I ran across this recipe, it got bookmarked for a rainy sunny day. The last thing you want to do on a sunny summer day is to be slaving over the stove prepping a delicious meal then standing over the sink for half an hour afterward to take care of the dishes. Enter: crockpot.
Yeah, I know that crockpots are usually reserved for comfort foods – roasts, stews, soups. But then, you have the beloved pulled pork, or chicken in my case, that is so tender in the crockpot that just redeems the crockpot as an all-year kitchen appliance!
Mango Whiskey BBQ Pulled Chicken
2 mangos
2 (boneless, skinless chicken breasts
1 tablespoons ground black pepper
1 teaspoon kosher salt
1 teaspoon chipotle chile powder
2 Tbls balsamic vinegar
1 cups water
1 teaspoon chipotle chile powder
2 teaspoons honey
1 (1.5 fluid ounce) jigger whiskey
1 (12 ounce) bottle barbeque sauce
Peel the mango and remove the pit. Place the pit into a slow cooker, then roughly chop the mango and set aside.
Place the chicken into the slow cooker, and season with the black pepper, kosher salt, and 1 teaspoon chipotle powder; pour in the balsamic vinegar and water.
Cover, and cook on Low 5 to 8 hours until the meat is very tender. Once done, drain the chicken, discarding the cooking liquid and mango pits, and shred with two forks.
While the pork is cooking, in a saucepan put the mango along with the honey, 1 teaspoon chipotle powder, and whiskey and bring to a simmer.
Reduce heat to medium-low, and simmer, stirring frequently until the mango has reduced and darkened slightly, about 10 minutes. Stir in the barbeque sauce, and remove from the heat.
Return the shredded chicken to the slow cooker, and stir in the mango barbeque sauce. Cover, and cook on High 1 hour until the chicken absorbs the barbeque sauce.
The original recipe called for pureeing the mango but honestly, I was too lazy and didn’t want to dirty up another appliance so chunky it was! And I think I actually preferred it that way – the bites of mango were my favorite part!

I was looking at BBQ in the Oakland Bay area, and found “your review” (?) and a profile that led me to this blog. The Mango Whiskey Pulled Chicken Sandwich caught my eye. All of the recipe-food photos are very inviting. I think I gained a few “healthy calories” just scanning the first page!
Mango, whiskey and pulled chicken sounds like a great combo. Must try!
